Difference Between Green and Black Olives
Primarily, the difference comes back to the point in time at which they are harvested. Green Olives are picked prior to ripening whereas Black Olives have been allowed to ripen on the tree. Soaked in a solution containing Lye, Green Olives are then fermented for anything between 6 to 12 months after having been harvested with the longer the fermentation process being, the less bitter and more flavorsome the olive. Black Olives are likewise soaked in Lye then cured in brine. Green Olives usually pitted and often stuffed with Pimientos, Jalapenos, Anchovies, Garlic or Onions whereas Black Olives are rarely stuffed.
