Radish tzatziki with pita triangles

Ingredients :
  • 1 bunch (450g) radish, ends trimmed, washed, cut into matchsticks
  • 200g Greek-style natural yoghurt
  • 1 small garlic clove, crushed
  • 2 tbs chopped fresh mint
  • 2 tsp fresh lemon juice
  • 1/2 tsp ground coriander
  • 4 rounds pita bread
  • Olive oil spray
  • Sea salt flakes, to serve
  • Fresh mint leaves, to serve
Method :
  • Step 1 : Preheat oven to 180°C. Combine radish, yoghurt, garlic, mint, lemon juice and coriander in a small bowl. Season with salt and pepper to taste. Cover and place in the fridge for 10 minutes to infuse.
  • Step 2 : Cut each pita round into 8 triangles. Place on 2 baking trays. Spray with oil. Top with sea salt and pepper. Bake for 5-6 minutes or until crisp and golden. Set aside to cool slightly.
  • Step 3 : Top tzatziki with mint leaves. Serve with pita triangles.
