Prawns with rockmelon, prosciutto & basil

Ingredients :
  • 1 rockmelon, halved, deseeded, peeled, each half cut into 9 wedges
  • 18 cooked king prawns, peeled leaving tails intact, deveined
  • 12 thin slices prosciutto
  • 1 small bunch basil, leaves picked, leaves torn
  • 60ml (1/4 cup) extra virgin olive oil
  • 2 tbs fresh lime juice
  • Salt & freshly ground
  • black pepper
Method :
  • Step 1: Arrange the rockmelon, prawns, prosciutto and basil on serving plates.
  • Step 2: Combine oil and lime juice in a small bowl. Drizzle over the salad. Season with salt and pepper and serve immediately.
