Egg and lettuce cups


  • 4 eggs
  • 1 tablespoon mayonnaise
  • 1/4 teaspoon curry powder,
  • 12 baby cos lettuce leaves


  1. Step 1 - Place eggs in a saucepan and cover with cold water. Bring to the boil over high heat. Cook for 4 minutes. Drain and cover with cold water. Set aside to cool. Peel. Place in a bowl. Use a fork to mash. Stir in mayonnaise and curry powder, if desired. Arrange baby cos lettuce leaves on serving plates. Spoon in the egg mixture. Serve.
