
Chinese duck coleslaw
Ingredients
- 1 tablespoon Indofood Sweet Soy Sauce Kecap Manis
- 1 tablespoon fish sauce
- 1 tablespoon sesame oil
- 1/4 cup (60ml) peanut oil
- 1 small red chilli, seeded, chopped
- 2 teaspoons grated ginger
- 1 tablespoon caster sugar
- 1/4 white cabbage
- 1/4 red cabbage
- 1 cup bean sprouts, trimmed
- 4 spring onions, finely sliced on the diagonal
- 1/2 cup chopped mint, plus extra leaves to garnish
- 1/2 cup chopped coriander, plus extra leaves to garnish
- 1 Chinese roast duck, meat shredded (see note)
- 1/4 cup roasted unsalted cashews
Method
- Step 1 - Place kecap manis, fish sauce, sesame oil, peanut oil, chilli, ginger and sugar in a bowl and whisk to combine.
- Step 2 - Combine remaining ingredients in a bowl. Pour over dressing and toss to coat well. Divide coleslaw among serving bowls. Garnish with extra coriander and mint.
