SPINACH AND LENTIL SOUP

“Hearty Vegetarian Soup”

INGREDIENTS

  • 2 teaspoons olive oil
  • 2 crushed garlic cloves
  • 1 tablespoon of tomato paste
  • 1.25L vegetable stock
  • 420g red lentils
  • 1 bunch coarsely chopped English Spinach
  • 2 tablespoons lemon juice

METHOD

Step 1

Heat oil in a medium sized saucepan. Add onion and cook while stirring 5 minutes or until soft. Add tomato paste and garlic then cook, stirring 30 seconds or until you can smell the aroma

Step 2

Add stock and lentils to pan and bring to the boil. Reduce heat to low and allow to cook whilst being partially covered. Stir occasionally for 15 minutes or until lentils are soft

Step 3

Add spinach to the lentil mixture and cook for 1-2 minutes until spinach wilts. Stir in lemon juice and season with pepper. Serve with bread rolls
