INGREDIENTS:

  • 1 x bunch asparagus
  • 3 x large potatoes peeled and cut into eight pieces each
  • 10 x cherry tomatoes quartered
  • 1/2 x avocado
  • 1 x large onion sliced
  • 1 x cannellini beans or beans of your choice drained
  • 2 x tablespoons butter
  • 1/4 x cup white wine
  • olive oil
  • salt to taste

METHOD:

  • Step 1 – preheat oven to 180 degrees
  • Step 2 – cut any wooded ends of asparagus and wash gently to clean then chop into pieces
  • Step 3 – oil a large baking tray
  • Step 4 – add all chopped ingredients into tray
  • Step 5 – chop avocado into small chunks and place in tray
  • Step 6 – stir all ingredients throughly making sure that everything is coated well
  • Step 7 – add the butter
  • Step 8 – place in oven and cook for one hour
  • Step 9 – at the 30min mark give everything a good stir
  • Step 10 – cook for remaining time and once brown and well baked remove from oven
  • Step 11 – serve suggestion serve with a fresh green salad for a vegetarian option
