A winter warming family favourite!


  • 1 tablespoon peanut oil
  • 1 brown onion (cut in wedges)
  • 2 tablespoons red curry paste
  • 700g pork fillet cut into thin strips
  • 400ml can light coconut milk
  • 2 teaspoons brown sugar
  • 1 table spoon fish sauce
  • 1 red capsicum (diced)
  • 125g green beans (cut crossways)
  • 2 red chillies thinly sliced
  • 1/4 cup unsalted peanuts
  • Jasmine rice to serve


Step 1

Heat wok to high and add oil
Stir-fry onion 2 mins until tender
Add curry paste and stir-fry 2 minutes

Step 2

Add pork and stir-fry 2 minutes
Add in coconut milk, brown sugar, fish sauce, beans and capsicum
Stir until combined, Bring to a gentle boil
Reduce heat to medium then simmer for 2 minutes until the vegetables are tender

Step 3

Spoon curry over jasmine rice
Top with peanuts and chilli then serve
