MEXICAN CORN SALAD

“Easy Vegetarian Meal”

INGREDIENTS

  • 2 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • 1/4 teaspoon of caster sugar
  • 1 teaspoon of mexican chilli powder
  • 250g mini roma tomatoes (quartered)
  • 2 cups of shredded iceberg lettuce
  • 400g can kidney beans (drained and rinsed)
  • 125g can of corn kernels (drained and rinsed)
  • 2 green onions (thinly sliced)
  • 1 small chopped avocado
  • 150g packet of corn chips

METHOD

Step 1

Place oil, lemon juice, sugar and chilli powder into a jug then using a fork, whisk until the sugar has dissolved

Step 2

Place lettuce, kidney beans, tomato, corn, green onion and the avocado in a large bowl
Add the dressing then toss to combine the ingredients. Serve with corn chips
