HOW TO MAKE BANANA BREAD (USING BLACK SKINNED/OLD BANANAS)

Don`t throw away Black Bananas! We had left over bananas at home. We placed them in the fridge to make a cake in the next coming days but never got around to it, so in the freezer they went for two weeks. Totally black skinned and frozen solid. They are perfect for using up in banana cakes and breads. Make small cupcake sizes and the kids will love them. Great to pack in the school lunch box too! Not very sweet, all whole ingredients and delicious! These are really simple and nice, worth baking if you haven’t already done so, not really sweet, nutritional natural ingredients and economical. BANANA BREAD TOPPED WITH RASPBERRIES: (THIS IS FOR TWO LOAVES)

INGREDIENTS:
250grams x butter at room temperature
1/2 cup x brown sugar
4 cups x mashed banana
4 x eggs
2 x teaspoons vanilla extract
2 x teaspoons bicarb of soda
2 x teaspoons baking powder
2 x teaspoons ground cinnamon
1/2 cup x coconut
1/4 x cup golden syrup or honey (add this when adding the flour mixture) raspberries (fresh or frozen) optional

METHOD:
Step 1 – preheat oven to 160 degrees
Step 2 – in an electric mixer cream together butter and sugar for at least 5 – 6 minutes until light and creamy
Step 3 – scrape down all the sides of the bowl
Step 4 – add eggs and vanilla and beat well
Step 5 – in a bowl sift together, flour, bicarb, baking powder and cinnamon
Step 6 – once combined mix through the coconut
Step 7 – then add the banana and flour/coconut mixture to creamed butter and commence to mix together well with wooden spoon or spatula ( making sure all dry ingredients are totally combined through)
Step 8 – once well combine spoon into cake tins and top with raspberries
Step 9 – for small cakes with with no raspberries on top cook for 30 minutes
Step 10 – for small cakes with raspberries on top cook for a further 5 – 6 minutes or until skewer comes out clean
Step 11 – for whole cakes cook for approx 60 – 65 minutes making sure at the 30minute mark rotate the cakes swapping oven shelves.

NB: This is a banana bread so it can get a little dry. We found that the smaller cakes stay a little more moist.
