HONEY MUSTARD PUMPKIN

INGREDIENTS

  • 1kg peeled and chopped pumpkin
  • 2 tablespoons of honey
  • 1 tablespoon olive oil
  • 2 teaspoons wholegrain mustard
  • 1/4 cup toasted pine nuts
  • 2 tablespoons chopped parsley
  • 8 chopped carrots

METHOD

Step 1

Preheat oven to 180C (160C fan-forced)

Step 2

Place pumpkin and carrot onto a baking pan
Combine honey, mustard and olive then add to vegetables; toss to coat
Bake for 60 minutes or until the vegetables are tender

Step 3

Stir through parsley and nuts before serving
