HOMEMADE TOMATO BREAD GRATIN

INGREDIENTS

3 thinly sliced onions
3 thinly sliced garlic cloves
1.2kg mixed tomatoes (large to cherry size)
4 tablespoons virgin olive oil
8 sprigs of oregano or thyme
1 tablespoon of castor sugar
80g fresh breadcrumbs

METHOD

Step 1
Heat oven to 180C (160C fan forced)
Heat half the olive oil in a pan and gently soften the garlic and onions and garlic until they become really soft and sticky but not browned. Place the onions, tomatoes, sugar, herbs and breadcrumbs into a baking dish then season well before tossing all the ingredients together

Step 2
Drizzle the mixture with the remaining olive oil, scatter with a few extra herb sprigs and bake for 1 hour until a golden colour on top and the tomatoes are rather juicy
