“Party Pleaser”


  • 500G chopped butternut pumpkin
  • 2 tablespoons olive oil
  • 4 chicken thigh fillets (remove excess fat)
  • 150g Wattle Valley Chunky Basil, Cashew and Parmesan Dip
  • I large roasted red capsicum
  • 150g feta cheese (crumbed)
  • 1/2 cup grated parmesan cheese
  • 2 wood fire pizza bases


Step 1

Preheat oven to 200oC.
Drizzle 1 and 1/2 teaspoons over the pumpkin
Season with salt & pepper then bake 15 minutes. Set aside

Step 2

Brush chicken with remainder of oil and season with salt & pepper
Grill for 5 mins either side on pre-heated char grill (high temp)
Set aside to cool then cut into thick slices

Step 3

Raise oven temperature to 240o C
Place pizza bases on 2 baking trays before spreading with Dip
Top pizza with pumpkin, chicken and capsicum
Sprinkle with feta and parmesan

Step 4

Bake 15-20 minutes until bases are crisp and parmesan cheese has melted
