Carrot Halwa – The best of Indian Desserts


  • 1 bowl of grated carrot
  • 5 spoonfuls of Ghee
  • 10 crushed cardamom pods
  • 750ml milk
  • 330g palm sugar
  • Pinch saffron threads
  • 60g chopped cashews, almonds and raisins


Step 1

In a medium sized saucepan heat the ghee over med-high heat. Add cardamom and stir for 30 seconds or until it becomes aromatic. Add in the carrot and cook while stirring 3 mins or until the carrot becomes slightly wilted in apprearance

Step 2

Add milk to the saucepan then bring to the boil. Simmer while stirring constantly 5 mins. Reduce the heat to low and simmer while stirring occasionally for approx. 1 hour or until the liquid is reduced by about one third

Step 3

Add both the sugar and saffron to the saucepan. Increase the temperature to med. Stir often while it is cooking (40 minutes or until mixture appears thick and glossy) Spread evenly among bowls and serve warm or cold sprinkled with the nut and raisin mix.


Depending on your taste, this dessert can be served with greens and a drizzle of soy sauce and sesame oil
