Apricot muesli slices

Ingredients

  • 1 cup Healtheries Wheat & Gluten Free Muesli
  • 1 cup rice flour
  • 1/4 cup honey
  • 80g butter or margarine
  • 2 eggs

Topping

  • 1 cup Healtheries Wheat & Gluten Free Muesli
  • 50g butter, melted
  • 1/4 cup honey
  • 1 egg
  • 1 cup chopped dried apricots

Method

  • Step 1 – Place muesli, flour, honey, butter and eggs into a food processor. Process until well combined. Press into a greased or lined 18 x 28cm lamington tin.
  • Step 2 – Prepare topping Combine topping ingredients. Spoon mixture evenly over base. Press down well with the back of a spoon.
  • Step 3 – Bake in a moderate oven (180°C) for 20 minutes or until firm. Allow to cool. Cut into pieces. Store in an airtight container.
